Focaccia





La focaccia classica di Genova, meglio conosciuta come focaccia alla genovese (in lingua ligure a fugàssa), è una specialità tipica della cucina ligure, una sorta di pane piatto alto massimo 2 cm si distingue perché, prima dell'ultima lievitazione viene spennellata con un'emulsione composta da olio extra vergine di oliva, acqua e sale, la si può consumare già a colazione, come "rompi digiuno" nella mattinata o come aperitivo o antipasto.

La focaccia è preparata in diverse città italiane, talvolta con modifiche rispetto a quella tradizionale genovese. A Genova, dove è nata, è prodotta con la ricetta tradizionale, così come nelle città e nei borghi dislocati lungo la riviera ligure.

Le caratteristiche di sapore e qualità sono meglio riscontrabili quando il prodotto è ancora caldo, appena uscito da una delle infornate che tradizionalmente si succedono nella mattinata. La fragranza è frutto della qualità della farina e dall'uso di olio extravergine d'oliva di alta qualità, oltre che dalla lavorazione.

Tradizionalmente, la focaccia è un piatto tipico del mattino o del primo pomeriggio. È uso recente, sebbene da alcuni criticato, inzuppare la focaccia nel cappuccino o nel latte per la colazione, come pure quella con le cipolle accompagnata da un bicchierino di bianco.

Infatti molto diffusa è la focaccia con le cipolle, alimento di antiche tradizioni nei quartieri più popolari di Genova e pasto usuale degli scaricatori del porto perché capace di saziare molto, in quanto la cipolla blocca i recettori dello stimolo della fame.

Vi sono altre varianti: la focaccia con le olive (sopra alla focaccia e non nell'impasto, come per le cipolle) o con la salvia (nell'impasto) o con il rosmarino (nell'impasto) o con le patate (nell'impasto) o con l'uvetta passa (in forma più dolciastra, nell'impasto); in epoca più recente è prodotta anche focaccia con patate e/o pomodori (sopra) o noci (nell'impasto) o con il formaggio (non tipo Recco).
