Focaccia

The classic focaccia of Genoa, better known as focaccia alla genovese (in Ligurian language a fugàssa), is a typical specialty of Ligurian cuisine, a sort of flat bread maximum 2 cm high stands out because, before the last leavening, it is brushed with a emulsion made up of extra virgin olive oil, water and salt, it can be eaten already for breakfast, as a "break fast" in the morning or as an aperitif or appetizer.
The focaccia is prepared in several Italian cities, sometimes with changes compared to the traditional Genoese one. In Genoa, where it was born, it is produced with the traditional recipe, as well as in the cities and villages located along the Ligurian Riviera.

The characteristics of flavor and quality are best found when the product is still hot, just out of one of the batches which traditionally follow one another in the morning. The fragrance is the result of the quality of the flour and the use of high quality extra virgin olive oil, as well as the processing.

Traditionally, focaccia is a typical dish in the morning or early afternoon. It is recent use, although criticized by some, to soak the focaccia in cappuccino or milk for breakfast, as well as the one with onions accompanied by a glass of white.

In fact, the focaccia with onions is very widespread, a food of ancient traditions in the most popular neighborhoods of Genoa and the usual meal of the harbor unloaders because it is able to satiate a lot, as the onion blocks the receptors of the hunger stimulus.

There are other variants: focaccia with olives (above the focaccia and not in the dough, as for the onions) or with sage (in the dough) or with rosemary (in the dough) or with potatoes (in the dough) or raisins (in a more sweet form, in the dough); in more recent times focaccia with potatoes and / or tomatoes (above) or walnuts (in the dough) or with cheese (not Recco type) is also produced.
