Brioche con tuppo



La brioche con il tuppo è un tipico dolce al forno siciliano, molto diffusa anche nel resto del Mezzogiorno d'Italia, dalla forma tondeggiante e sono molto soffici, ottime per colazione o merenda.
Si è soliti per tradizione mangiarle farcite con il gelato o in accompagnamento alla granita, ma sono ottime anche farcite con crema pasticcera al limone.

The brioche with "tuppo" is a typical Sicilian baked dessert, very common also in the rest of Southern Italy, with a rounded shape and they are very soft, excellent for breakfast or snack.
Traditionally, it is customary to eat them stuffed with ice cream or to accompany "granita", but they are also excellent stuffed with lemon custard.


Ingredienti:
  • 500g farina 360W
  • 250g latte intero
  • 10g malto in povere
  • 20g latte in polvere
  • 12.5 lievito di birra
  • 40g zucchero semolato
  • 10g sale
  • 100g tuorli
  • 100g burro
  • 20 grammi di mix aromatico (oppure zeste di arancia)

    Preparazione:

    Mettere la farina, il malto e il latte in polvere nella planetaria; a parte sciogliete il lievito nel latte con lo zucchero e versateli in planetaria sulle farine. Lasciate impastare aggiungendo i tuorli. Unite infine il burro ammorbidito e lasciatelo incorporare fino a ottenere una pasta liscia ed elastica. 

    A questo punto ponete l’impasto sul piano da lavoro e formate una palla.
    Mettete la palla in un contenitore dai bordi alti, e fatela lievitare circa 2 ore e mezza in un luogo tiepido. 
    Una volta lievitata procedete a fare le pezzature.
    Per creare il tuppo avrete bisogno di una pezzatura da 50g ed una da 15g. 

    Con la più grande formate una pallina a cui andrete a fare un buco al centro dove successivamente andrete ad inserire la pallina più piccola.  (con lo stesso impasto poi ho realizzato anche palline da 65g rotonde).

    A questo punto mettete nuovamente a lievitare fino al raddoppio. Spennellate con del bianco d’uovo.

    Una volta lievitate infornate a 170°C fino a doratura. Potete poi una volta sfornate le vostre brioche lucidarle con confettura di albicocca.

    La ricetta base per realizzare la pasta brioche è di L.Montersino
    Ingredients:
    • 500g 360W strong flour
    • 250g whole milk
    • 10g malt powder
    • 20g powdered milk
    • 12.5 fresh yeast (4g dry yeast)
    • 40g caster sugar
    • 10g salt
    • 100g yolks
    • 100g butter
    • 20 grams of aromatic mix (or orange zest)

    Preparation:

    Put the flour, malt and milk powder in the mixer; Separately, dissolve the yeast in the milk with the sugar and pour them into the mixer on the flour. Leave to mix adding the yolks. Finally add the softened butter and let it incorporate until a smooth and elastic paste is obtained.


    At this point, place the dough on the work surface and form a ball.
    Put the ball in a container with high edges, and let it rise about 2 and a half hours in a warm place.
    Once leavened, proceed to make the pieces.
    To create the tuppo you will need a 50g and a 15g size pieces.

    With the larger one, form a ball to which you will make a hole in the center where you will then insert the smaller ball. (with the same mixture then I also made 65g round balls).

    At this point put it to rise again until doubled. Brush with egg white.

    Once leavened, bake at 170°C until golden brown. Once you have baked your brioche, polish them with apricot jam.
