Hot Water Crust Pastry


Traditional pastry, usually made with pork shoulder and belly, it is perfect to use with savory tastes. Thanks to this method of using hot water, flour and melted fat and assemble them all together allows you to create a dough which you can use to make different pies.




Ingredients:


  • 575g Plain flour
  • 200g Lard
  • 220g Water
  • (Depending on the used ingredients, you can add a pinch of salt while making the dough)


Method:

Heat the lard with water into a pan until it melts bringing it just to the boil and then, using a wooden spoon, stir into the flour.  When the mixture is cool enough to handle knead it until it becomes smooth. (The mixture must still be quite warm) leave it to rest for 20/30 minutes.
